Super Healthy Banana Nut Bread. Use organic ingredients as much as possible. This is mostly protein, grain & guilt free. Please share!
1-1/4 Cup Almond Flour
1/4 Cup unsweetened coconut
1/2 tsp baking soda (pure)
1/2 tsp Baking Powder (aluminum free)
4 tsp cinnamon
Mix thesewith a fork, then in a separate bowl beat:
3 ripe bananas
1 Tsp Vanilla (or a little more if you prefer.
Mix the two bowls together, stir to moisten and then beat until pretty smooth. Add 1 cup chopped walnuts, Mix and pour into a greased loaf pan lined with parchment paper.
Bake at 375 30-40 minutes or until done. Cool completely, slice into 8-12 pieces. These can be frozen. A perfect mid day snack with no guilt!
