Ingredients: Use Organic wherever possible

Chicken Pieces or leftover cooked chicken
5 medium tomatoes, chopped
1 Inch piece of ginger, minced
1 clove garlic, minced
1 small onion, minced
1 tsp cumin powder
1 tsp pure salt
3 TBSP Coconut Oil
handful chopped cilantro or spinach leaves

Melt coconut oil in pan. Add ginger, garlic and onion and saute until softened. Add everything else except cilatro or spinach and simmer until chicken is done or about 20 minutes if using leftover meat (until sauce is reduced to your liking.) Serve in bowls. Normally serves 2-4 depending on how much chicken you used.
